Bacon, Ranch Chicken Casserole (Low Carb)


If your family loves all things Ranch and you love all things easy, this one is for you.


Add 2 packages of dry ranch seasoning to 8 ounces of cream cheese and 16 ounces of sour cream


I cooked a bag of frozen spinach in the microwave. I’m gonna drain it really well and fold into the cheese mixture.

Mom tip… I sneak spinach into lots of things. The kids don’t taste it and it’s so nutritious.


I sprayed my casserole dish and fill the bottom with 2 pounds of cooked cubed chicken.


Poured my cheese mixture over the top and then sprinkled with some crispy bacon (I used 7 slices).


Placed this in the oven for 10 minutes at 375 degrees.


While cooking, I made the topping.

1 cup of crushed pork rinds, and ½ cup of parmesan cheese

Poured over the top and cooked for 5 more minutes


Comes out nice and crispy and the whole family enjoyed it.


Ingredients:

2 lbs cooked cubed chicken

2 packages dry ranch seasoning

8 oz cream cheese

16 oz sour cream

12 oz frozen spinach

7 pieces of bacon (cooked and crumbled)

½ cup parmesan cheese
