BLT Chicken Salad - Low Carb

Want a low carb chicken salad recipe for the summer? This BLT option is tasty and filling!


Start with 3 cups of cooked chicken and 1 pound of cooked and crumbled bacon. Throw in some tomatoes, red onion and chopped celery and mix together.


The dressing is just mayo, lemon juice, onion and garlic powder and some salt and pepper. Add to your chicken and stir well.


You can also use canned chicken or diced and cooked chicken for this recipe.


I eat mine on low carb tortilla wrap with some baby spinach but it’s also good on peppers, celery and cucumbers.


Ingredients

3 cups cooked chicken

1 lbs cooked and crumbled bacon

1 cup sliced cherry tomatoes

½ small red onion

2 chopped celery stalks

½ cup mayo

2 tbsp lemon juice

1 tsp onion powder

1 tsp garlic powder

½ tsp salt

½ tsp pepper
