Keto Bacon Mushroom Creamy Chicken

Another example of food I ate to lose 70 pounds and yes it includes bacon. You are gonna wanna save this one if you are keto or low carb.

5 NET carbs!!!


First… bacon. Cook 7 slices and then cut into small pieces.


Next season 4 thin sliced chicken breasts and then brown in the skillet and remove.


In the same skillet saute your mushrooms until soft then add ghee or butter and heavy whipping cream and cook a couple minutes. Add almond flour to thicken the sauce. Add more flour to thicken more or more cream to thin it.


Pour your bacon in and heat up then top the sauce over your chicken breasts. Garnish with some optional red pepper flakes.


Ingredients:

4 thinly sliced chicken breasts

2 tbsp olive oil

2 minced garlic cloves

1 tsp paprika

1 tsp cayenne pepper

Salt and pepper to taste


Cream Sauce:

13 oz sliced portabello mushrooms

7 slices cooked and chopped bacon

1 cup heavy whipping cream

1 tbsp almond flour

1 tbsp ghee (or butter)

4 minced garlic gloves

Salt and pepper to taste


Optional garnishes:

Red pepper flakes and parsely

A follow-up to my previous post. I tried this recipe tonight for dinner, substituted xanthan gum for the almond flour and it was superb! 1/2 tsp. of the gum did the trick and formed a luxurious sauce! A side benefit - with your recipe and my xanthan gum as inspiration, I discovered a quick way to mimic a low-carb "condensed" cream of mushroom soup that I can use to pour over my slow-cooker pork loin roast before starting the cooking. I am used to opening a can of cream of mushroom soup (Campbell's, Kroger's or Aldi's) and laying it on the roast undiluted in the pot. I would use xanthan gum in lieu of the almond flour for even less carbs - it's an excellent carb-free and flavor-free emulsifier. For the amount of liquid present, I would use only 1/2 tsp of xanthan gum to thicken the cream sauce. Otherwise, I intend to follow this EXCELLENT recipe to the letter and give it a try! Thanks for the Pinterest post on this! I already have the chicken breast down from the freezer to thaw.
