Want a simple low carb soup that is FULL of flavor? Save this recipe, it’s a winner!
Place 2 chicken breasts in the instant pot and add a packet of low sugar taco seasoning, diced tomatoes, some salt, chicken broth and Salsa Verde and cook on the poultry setting (or according to your pot’s instructions).
Once done remove the chicken and shred. Place a block of cream cheese in the soup and mix until melted then add the chicken back in and stir.
Serve with some shredded jack cheese.

2 large chicken breasts
1 packet of low sugar taco seasoning
28 oz can petite diced tomatoes (don’t drain)
¼ tsp of salt
2 cups chicken broth
1 jar of Salsa Verde
8 oz cream cheese
Top with shredded jack cheese and/or sliced avocado
