
Low Carb Baked Meatball Parmesan
Looking for a hearty low carb dinner? These were amazing and great for leftovers too!
This is a DOUBLE recipe as we were feeding guests as well.
I combined ground beef and ground pork with grated parmesan cheese, heavy whipping cream, eggs, garlic, onion flakes, Italian seasoning, salt and pepper.
Mixed together well by hand and rolled into balls and placed in a large casserole dish. (about 24 balls per dish)
I covered with jars of low carb marinara sauce and topped with mozzarella cheese and fresh chopped parsley and baked for 40 minutes at 350 degrees
So good and a total crowd favorite!
Serving Size is 3 meatballs and 4 net carbs
Ingredients:
2 lbs of ground beef
2 lbs of ground pork
2 cups HWC
2 eggs
4 tbsp minced garlic
4 tbsp onion flakes
2 tbsp Italian seasoning
1 tsp salt
1 tsp pepper
