
Low Carb Cajun Chicken and Veggies
Looking for a spicy low carb dinner? This is a great option and made aweseome leftovers too!
Start with cutting up 3 large chicken breasts and drizzle with olive oil on top then heavily season with Cajun spices, for me it’s Slap your Mama seasoning.
In a skillet, melt butter, add more of the seasoning then add the chicken cooking for a few minutes and then add your veggies, peppers, zucchini and red onion. Cover and cook until tender.
Place on top of riced cauliflower and enjoy.
Ingredients
3 large chicken breasts (diced)
2 tbsp olive oil
Cajun Seasoning (amount up to you)
3 tbsp butter
Red Pepper
Yellow Pepper
2 zucchinis
½ red onion
Riced Cauliflower
