Low Carb Cranberry Chicken Salad


Low Carb Cranberry Pecan Chicken Salad

This low carb cranberry chicken salad is great to make a head of time and have for lunch through out the week.  You can serve in a low carb tortilla, on top of an avocado  or use a dip with green peppers or celery.


Use 2 cans of chicken (hate canned chicken?  Cool, use what ever chicken you like) then and stir in ½ cup of mayo, ½ cup of plain Greek yogurt, a tablespoon of  Dijon mustard and salt and pepper to taste.


Fold in some low sugar dried cranberries (yes, low sugar options do exist), red onion, celery and chopped pecans.  Lastly add crumbled bacon.  Mix really well.


To me this is better if you cover and let sit in the fridge for an hour or so.


Side note, you can always leave out the cranberries if they don’t fit your macros.

Ingredients:

2 cans of chicken (12.5 oz drained)

½ cup avocado mayo

½ cup Greek plain yogurt

1 tbsp Dijon mustard

Salt and pepper to taste

¼ cup low sugar dried cranberries

¼ cup chopped pecans

2 tbsp chopped red onion

1 chopped celery stalk

5 slices of bacon (crumbled)
