Low Carb Cranberry Pecan Chicken Salad
This low carb cranberry chicken salad is great to make a head of time and have for lunch through out the week.
Use 2 cans of chicken and stir in the mayo, Greek yogurt, Dijon mustard and salt and pepper.
Fold in some low sugar dried cranberries, red onion, celery and chopped pecans.
Leave out the cranberries if they don’t fit your macros.
Place in romaine lettuce, low carb wrap or a pepper. Super tasty.
Ingredients:
2 cans of chicken (12.5 oz drained)
½ cup avocado mayo
½ cup Greek plain yogurt
1 tbsp Dijon mustard
Salt and pepper to taste
¼ cup low sugar dried cranberries
¼ cup chopped pecans
2 tbsp chopped red onion
1 chopped celery stalk
