Low Carb Ham and “Faux”tato Soup
This is one of my Family’s FAVORITE meals that I make. I’m not always a fan of things made with cauliflower but this one LEGIT tastes like potatoes. This is a double recipe cuz my family loves it for left overs.
Start with chopping your cauliflower and boil until tender (about 8 minutes) then drain and set aside, keeping the liquid.
Sauté an onion in butter then add some almond flour, red pepper flakes and salt and pepper.
Stir for at least 2 minutes creating a roux. This part is the magic of the soup.
Eating low carb and cutting out sugar and starchy foods has been instrumental in improving my overall health and reversing my high blood pressure and no longer being pre-diabetic.
Add liquid from the cooked cauliflower and chicken broth and bring to a boil.
Add in your cubed ham, cauliflower, heavy whipping cream, and shredded cheese and stir.
Lower heat on the soup and let simmer for about 10-15 minutes
Ingredients (this is a double recipe)
2 heads of cauliflower chopped
1 small yellow onion
1 stick of butter
3 tbsp almond flour
1 tsp red pepper flakes
½ tsp salt
½ tsp pepper
2 cups chicken broth
1 cup of liquid from the cooked cauliflower
1 ½ cup HWC
4 cups cubed ham
3 cups shredded cheddar cheese
