Jalapeno Popper & Chicken Casserole

If you are low carb or keto and want a dinner recipe with a kick, this is it!  My family was raving about this one, be sure to save it.


Cube 4 boneless chicken breasts and cook in 2 tbsp of butter.  Add a package of ranch seasoning.

While cooking, combine 8 oz of softened cream cheese with ½ cup heavy whipping cream 1/2 tsp of garlic powder and 1 tsp of Slap Ya Mama seasoning and mix well.


Pour the chicken into the bottom of a greased casserole dish and then put the cream cheese mixture on top and smooth it out. 


Cover with 4 chopped and deseeded jalapenos and 2 cups of shredded cheddar cheese.


Bake at 375 degrees for 20 minutes


Next cook up 6 slices of bacon and place on top of the casserole. 


This is exactly the type of food I ate on my 70 lbs weight loss journey.  Low carb, delicious and simple.

 

Ingredients:

4 chicken breasts

1 package of ranch seasoning

2 tbsp butter

8 oz cream cheese

½ cup HWC

½ tsp garlic powder

1 tsp of Slap Ya Mama seasoning (optional)

4 chopped jalapenos

2 cups shredded cheddar cheese

6 slices of bacon (crumbled)
