Low Carb Sausage and Veggie Casserole


Low Carb Cheesy Sausage, Broccoli and Cauliflower Casserole


Looking for a tasty, filling low carb dinner? This one was new for me and we will definitely be making it again.

Start with sauteing ½ and onion and some minced garlic.


Next cut up 12 oz of sausage, this was my pick as I love this flavor and then add to your skillet. Cook until brown on both sides and remove from heat.


In a bowl combine softened cream cheese, mayonnaise, spicy mustard, and shredded cheese. Once mixed, add steamed broccoli and cauliflower and stir until covered.


Place the sausage and onions in a casserole dish and then cover with your veggies add salt and pepper to taste and then add more shredded cheese.


Bake at 400 degrees for 15 minutes


Ingredients:

12 oz smoked sausage (I used andouille cajun sausage)

12 oz bag of steamed broccoli

12 oz bag of steam cauliflower

1 tbsp olive oil

½ an onion (chopped)

3 garlic cloves (minced)

8 oz cream cheese softened

½ cup mayo

2 cups shredded cheddar cheese

2 tbsp spicy mustard

Salt and pepper to taste


8 servings and 8 net carbs
