One Pan, Low Carb Taco Casserole

One pan, low carb and delicious, you are gonna wanna save this recipe whether you are low carb or not.
I sauted ½ an onion and browned 2 lbs of ground beef. After I drained it, I added the lowest sugar taco seasoning I could find, you can also make your own.
In a bowl, combine cottage cheese and a can of rotel. Spread over the ground beef evenly.
Next I top with shredded Mexican blend cheese, jalapenos and green onions. Simple low carb recipes are my jam and if you love them too, be sure to like this video and follow so you see more. This is the type of food that helped me lose 70 lbs and I’ve been able to maintain that for over 7 years.
I Baked this at 375 for 20 minutes then top with sour cream. I love mine served with some Quest chips.

2 lbs ground beef
½ chopped onion
1 package taco seasoning
16 oz cottage cheese
10 oz can of Rotel
2 cups shredded Mexican Blend Cheese
2 tbsp diced green onions
Sliced jalapenos
